Asian Vegetable or Pho Noodle Bowl Serves: 7 gallons

Ingredients

  • 7¼ gallons cold water
  • 1 qt. RC no added MSG GF Liquid Vegetable Consommé Mix
  • 1 Tbsp. RC Umami Sensations® Shiitake Mushroom Powder
  • 1 Tbsp. RC Umami Sensations® Soy Sauce Powder (Wheat Free)
  • ½ teaspoon RC Cilantro Flavor
  • ½ teaspoon RC Lemongrass Flavor
  • 14 oz. RC Ginger Puree
  • to taste - RC Chipotle Chile Concentrate

Instructions

  1. 1 Blend cold water with RC no added MSG GF Vegetable Consommé Mix until completely dissolved then add rest of ingredients and bring to a simmer or 165°F.
  2. 2 Suggested amount of vegetables to use:
  3. 3 6 lbs. cleaned chopped Bok Choy – fresh
  4. 4 2½ lbs. thin shredded Carrots
  5. 5 2½ lbs. Shredded Broccoli Stem – same size as carrots
  6. 6 10 oz. chopped fresh Scallions
  7. 7 1½ lbs. whole Snow Peas
  8. 8 14 oz. julienned Red Bell Pepper
  9. 9 Vegetable mixture can be added to broth at any time.
