Golden Leek & Mushroom Bisque

Golden Leek & Mushroom Bisque Serves: approximately 1 gallon

Ingredients

  • 3 lbs. Yukon gold potatoes, peeled and diced
  • 2 tsp. Liquid Vegetable Consommé Prep
  • 1 tsp. chopped garlic
  • 2 tsp. Mushroom Base
  • 1 tsp. thyme
  • 2 carrots, julienne
  • 10 oz. mushrooms
  • 1 bunch leeks, julienne
  • 4 oz. pancetta
  • 1 pint heavy cream
  • 2½ quarts prepared Chicken Base of your choice
  • 1 medium onion, very small dice

Instructions

  1. 1 Brown the pancetta over low heat.
  2. 2 Sauté the leeks, mushrooms, onion and carrots until tender.
  3. 3 Add the remaining ingredients, except cream, and simmer, stirring with a whisk until potatoes break up.
  4. 4 Finish with the heavy cream and season with additional RC Liquid Vegetable Consomme Prep.
