Golden Leek & Mushroom Bisque
approximately 1 gallon
Ingredients
- 3 lbs. Yukon gold potatoes, peeled and diced
- 2 tsp. Liquid Vegetable Consommé Prep
- 1 tsp. chopped garlic
- 2 tsp. Mushroom Base
- 1 tsp. thyme
- 2 carrots, julienne
- 10 oz. mushrooms
- 1 bunch leeks, julienne
- 4 oz. pancetta
- 1 pint heavy cream
- 2½ quarts prepared Chicken Base of your choice
- 1 medium onion, very small dice
Instructions
- 1 Brown the pancetta over low heat.
- 2 Sauté the leeks, mushrooms, onion and carrots until tender.
- 3 Add the remaining ingredients, except cream, and simmer, stirring with a whisk until potatoes break up.
- 4 Finish with the heavy cream and season with additional RC Liquid Vegetable Consomme Prep.
