Plant Based Mushroom Barley Soup

Ingredients
- 8 oz. mushrooms, sliced
- 1 rib celery, small diced
- 1 carrot, small diced
- 1 medium onion, small diced
- 1 tsp. chopped garlic
- 1 Tbsp. olive oil
- 1 cup prepared Mushroom Base
- 1 cup barley
- 1 Tbsp. chopped parsley
- pepper to taste
- ½ tsp. thyme
- 2 tsp. basil
- 1 bay leaf
- 2 qts. prepared Hearty Foundations™ Vegan GF FlavorMatch® Gluten-Free Chicken Flavor Base No Added MSG
Instructions
- 1 Sauté the chopped garlic and vegetables.
- 2 Add the herbs, prepared No Added MSG FlavorMatch® Vegetarian Chicken Flavored Base and prepared Mushroom Base.
- 3 Bring to a simmer and add barley.
- 4 Simmer until barley is tender.
- 5 Finish with chopped parsley.
