Plant Based Mushroom Barley Soup Serves: 2½+ quarts

Ingredients

  • 8 oz. mushrooms, sliced
  • 1 rib celery, small diced
  • 1 carrot, small diced
  • 1 medium onion, small diced
  • 1 tsp. chopped garlic
  • 1 Tbsp. olive oil
  • 1 cup prepared Mushroom Base
  • 1 cup barley
  • 1 Tbsp. chopped parsley
  • pepper to taste
  • ½ tsp. thyme
  • 2 tsp. basil
  • 1 bay leaf
  • 2 qts. prepared Hearty Foundations™ Vegan GF FlavorMatch® Gluten-Free Chicken Flavor Base No Added MSG

Instructions

  1. 1 Sauté the chopped garlic and vegetables.
  2. 2 Add the herbs, prepared No Added MSG FlavorMatch® Vegetarian Chicken Flavored Base and prepared Mushroom Base.
  3. 3 Bring to a simmer and add barley.
  4. 4 Simmer until barley is tender.
  5. 5 Finish with chopped parsley.
