Wild Mushroom Seafood Sauce

Serves: 1+ gallons


  • 4 oz. sweet sherry
  • 2 lbs. mixed mushrooms of your choice
  • 4 oz. chopped shallots
  • 1 package Seafood Bisque, prepared with Half & Half
  • chopped fresh chives for garnish


  1. 1 In a sauce pan sauté chopped shallots and mushrooms.
  2. 2 Add sherry and reduce liquid by half its volume.
  3. 3 Add prepared |seafoodbisque| and bring sauce to a simmer.
  4. 4 Garnish with chopped Chives.
